Hollandaise sauce with veg and poached eggs

Is there a better way of using up eggs and butter? Hard to say but hollandaise sauce with veg and poached eggs really hits the spot. Great dish when thee isnt much to cook with!

Your choice of veg with poached eggs. Here I have leek, broccoli and kale, and lemon hollandaise sauce.

Hollandaise is an emulsion sauce, the egg contains phospholipids which work to combine ingredients that would not normally blend together well. Phospholipids are both water and fat soluble.



Now for the sauce, for those scared to make it...its actually really easy. Melt 100g butter. Get yourself a small bowl and place in a pot over simmering water. Add to that 1 egg yolk and 1 tbsp lemon juice (you can use vinegar also) whisk until it thickens slightly then whisking drizzle in your melted butter slowly, keep whisking until all the butter is used. Season if needed. Done. It takes about 2 minutes to make!
