Ingredients
1 large banana, peeled and cut in
half lengthwise and then cut horizontally, you should have 4 short pieces
1 tbsp butter, cold, diced very
small
¼ of a cup of macadamia nuts
¼ cup of shredded coconut
Honey/cream to serve as an
optional extra
You can use berries, peaches,
cooked apple/pear/apricot, cherries, and you can add some cinnamon if you like!
Method
This makes a
lot of crumble which I like, if you prefer you can use less of the quantities.
Preheat your grill.
In a pan heat a little butter and
cook banana for about 1 minute on each side until golden brown. Place in your
oven proof dishes, you can do individual ones, or a big one.
Process your macadamia nuts
briefly until mostly fine, you can leave a few chunky pieces if you like. Take
out and add you coconut and butter, and using your fingers squish the butter
into the nut mix. You still want to see the butter chunks; this doesn’t take long
as you already cut the butter into small pieces. Place your crumble mix over
your fruit and grill for 5 minutes or so until the top is nicely golden brown.
Drizzle over some honey and cream if you want to add a little extra indulgence!
