Pizzlette



Serves 4

This is a cross between a deep pan pizza and a frittata/omelette

Ingredients

8 eggs
¼ of a cup of tapioca flour
1 tsp baking powder
1 tbsp water
Salt and pepper
Plus all your favourite pizza toppings

Method

Turn on your grill part of your oven to high.
Whisk everything in a large bowl except your pizza toppings; make sure there are no lumps.
Put 2 tbsp ghee/coconut oil in your pan, you want quite a hot pan; pour in your egg and turn down to medium. Place all you favourite pizza toppings and leave a 2 cm rim, this lets your mix rise around the outside like a deep pan pizza crust. Cook for 3 minutes and then put under the grill for another 3-4 minutes and it is golden brown and puffed up. Check your egg is cooked! Cut into wedges in the pan and serve up with a nice big salad.
