Coco Balls



Makes 20 balls

I chose sunflower seeds, brasil nuts and almonds for selenium and vitamin E content, and coconut oil cause coconut oil is AWESOME!! and cacao goji berries, crasins for extra antioxidants, and some iron in the shredded coconut, nuts, cacao and dried apricots.

Ingredients

1/3 cup each of sunflower seeds, brazil nuts, almonds, craisens(dried cranberries), goji berries, dried apricots- 2 cups altogether
½ cup of shredded coconut
2 tbsp raw cacao powder
5 tbsp coconut oil approx.

In a food processor blitz all your nuts, seeds, dried fruit, shredded coconut and cacao until mostly all chopped, add your coconut oil and blitz again until it comes together. Take out tbsp’s of the mix and squeeze into balls and put them in the fridge to set. You can’t really roll them as such because of the oil. They harden when refrigerated.
