Korma lamb chops with turmeric cauliflower rice and snow peas



Serves 4

8-12 mid loin lamb chops or similar (2-3 chops per person)
1/3 - ½ cup of korma paste or store brought
½ head of cauliflower, grated- I use a food processor with the grater attachment
5 cloves garlic, crushed
2 tsp ground turmeric
2-3 tbsp butter
400g snow peas, ends trimmed
400g pumpkin cut into 2 cm dice

Method

You can marinate the lamb with the korma paste for 2 hours or overnight if you have time.
Preheat the oven to 200C
Put the lamb and pumpkin in a roasting tray and bake for 15 mins.
While that is baking in a large pan heat your butter and put in your cauliflower, garlic and turmeric, mix well and cook on a medium heat for 10 minutes stirring regularly. Season with salt and pepper. Serve up your cauli, lamb chops and pumpkin. Put the pan that the cauli was in and put back on the heat and put in your snow peas. Add a splash of water and stir fry for 1 minute until they have changed colour, they should still be crunchy.
