Lamb meatballs on zucchini boats, satay miso sauce & nori chips



Ingredients

serves 4

500g mince, I used lamb mince
Salt and pepper
2 large zucchinis, cut in half lengthwise and cut in half again so you have 4 short pieces
300g cauliflower cut into small florets
300g broccoli, cut into small florets
as much garlic as you want, peeled
2 square sheets of nori
1 portion satay miso sauce

Method

In a bowl mix your mince with a really good grind of salt and pepper. Knead well until it is sticky, about 2 minutes. Roll into 20 meatballs, about a tbsp. for each one.  Set aside. Put your veg and garlic in a roasting dish with 1-2 tbsp coconut oil, melt first and then pour over and mix through with some salt and pepper. Bake at 190C for 40 minutes. Cook your meatballs in a large pan; you don’t need to add oil as lots comes out of your mince. These take 5-7 minutes. While they are cooking make your satay miso sauce, this sauce is super quick and easy! The nori chips are just sheets of nori which are cooked in a dry pan. You turn everyone few seconds for about 1 minute until they crispen up, you can then cut into triangles or whatever. Serve your meatballs on your halved zucchini “boats” add your other veg to your plate and pour your sauce over and arrange your nori chips.
