LSA and coconut crepe with maple syrup




Makes 1 big crepe

LSA is a ground up mix of linseeds(flaxseeds) sunflower seeds and almonds. You can get it from the supermarket
This is gluten and grain free and if you use coconut oil in place of butter, dairy free

Ingredients

2 eggs
1 tbsp shredded coconut
2 tbsp LSA
½ tsp cinnamon

Method

Beat altogether. In a large pan heat a little butter and pour in your mix and swirl the pan to coat. Cook about 1 minute on each side then turn over for another minute. Put the crepe on your plate and roll up. You can serve this with a nut cream, maple syrup, butter, cream etc..
